With the 4th falling in the middle of the week this year, it gives us TWO back-to-back weekends to celebrate in style and if you’re having trouble finding a unique, refreshing adult treat here’s a winner! Watermelon is a staple at pretty much any backyard BBQ… but what about a watermelon jello shot… in a watermelon rind? Yes please! Jaymee Sire from E is for Eat shows us how!
{STEP 1} Take a half a watermelon and dig a little “canoe” out of the inside with the sides still in tact to the jello has a place to set. No need to completely scrape it all out.
{STEP 2} Take your scooped out watermelon and throw it into a blender with about 15-20 fresh mint leaves. Blend until smooth.
{STEP 3} Now you’ll want to remove the solids. Simply pour your blended watermelon/mint mixture into a mesh strainer with a bowl underneath to retain the juice. You will need about 1 1/4 to 1 1/2 cups of juice to make one batch of jello shots.
{STEP 4} To make the jello mixture, combine the watermelon/mint juice with fresh squeezed lime juice and honey in a small saucepan. Sprinkle with 2 packets of Knox gelatin and let it soak in. Heat until everything is dissolved, stirring constantly. Add your vodka (can use a citrus flavor if you prefer) or gin and pour mixture into the scooped out watermelon boat. Refrigerate for at least 4 hours.
{STEP 5} Once the jello has completely set, you’re ready to cut into wedges. To do this, you’ll want to cut the “walls” off the sides of the watermelon. Next, cut the big wedge in half lengthwise and then cut into the little wedges.
Now you’re ready to go! Simply arrange your wedges on a plate, garnish with fresh mint leaves and, as Jaymee says, “wait for your friends to be amazed!”
